Granola Your Way.
Granola is often loaded with sugar so my preference has always been to make it myself. This version allows you to use whatever you like or have on hand. Despite this, I do recommend using ginger in your spice mix, as this gives it the kick that many granolas need. I always feel entirely virtuous when I have a full jar of granola sitting in my pantry.
Ingredients
Dry
4 cups oats (you could also use a combination of grains)
1 cup coconut flakes
1 cup nuts and seeds
1-2 tsp spices - ginger, cinnamon, nutmeg
1 cup dried fruit chopped (excluding goji berries as these will burn easily)
Wet
1/3 cup olive oil/butter/coconut oil
1/4 cup maple syrup/honey/rice malt syrup
2 egg whites whisked with fork until bubbly
Methods
Preheat oven to 150 degrees celsius. Line a baking tray with baking paper.
Combine dry ingredients in a large bowl.
In a separate bowl mix together wet ingredients.
Add wet into dry ingredients, stirring well.
Lay the granola out on lined tray making sure it’s not too spaced out as you want the clusters to form. Leave a hole in the middle of the tray (see image below) to prevent fruit from burning.
Bake for 45 minutes. Leave to cool before breaking up into clusters.
Store in airtight jar.
