Coconut and Hemp Seed Fudge.

No food processer, no cooking…just a bowl and a spoon. This fudge is delightfully quick and easy to prepare, which I heavily rely on when we are out of snacks. It's the perfect 'pick me up', full of healthy fats, plant protein and a rich chocolate flavour. Try stopping at one piece…I dare you!

Ingredients

3 tablespoons almond butter (peanut butter will work too)

2 tablespoons raw honey

1 tablespoon extra virgin coconut oil, melted

2 tablespoons cacao powder

1/2 cup desiccated coconut

1/3 cup hemp seeds

Pinch sea salt

Method

Combine nut butter, honey and coconut oil in a bowl and mix together. Stir through cacao, coconut, hemp seeds and salt until everything is well combined and "fudge-like". Depending on the consistency of your nut butter, you may need to add more desiccated coconut or hemp seeds if your mixture is too runny.

Using a piece of greaseproof paper, place the fudge on one side like a log, then fold the paper over the top. Press down with your hands or a rolling pin until you reach your desired thickness. Sprinkle hemp seeds or coconut on top and place in the freezer to set. Slice into bite size pieces and store in the fridge.
