Green Goddess Noodles.
The word 'goddess' just seems to sum up these noodles. When typing this word into ‘Google’, the response was beauty, love, motherhood and fertility. Pretty perfect description of this creamy, earthy, delicious dish; especially as it provides many nutrients essential for pregnancy and postpartum. This meal is high in folate, natural fats and fibre, and provides sustained energy to get you through this physically demanding time in your life.
You will be pleased to hear that these noodles take no time at all to prepare. Serve with some BBQ meat, a boiled egg, tinned fish or on their own!

Serves 2-3
Ingredients
180g soba noodles
2 bunches of asparagus, cut into thirds
2 tablespoons toasted pumpkin seeds
Dressing
1 avocado
1 bunch herbs (my favourite is a combination of coriander and dill, but parsley or basil would work too)
1 clove garlic
Juice of 1 lemon
Large handful rocket
1.5 tablespoons Greek yoghurt
1.5 tablespoons extra virgin olive oil
Sea salt
Method
Bring a small saucepan of water to the boil and cook noodles for 4 minutes (or as per packet instructions), adding the asparagus for the last minute. Drain and run under cold water, then drizzle with some olive oil. Place in the fridge to cool slightly while you prepare the dressing.
Add all dressing ingredients to a food processor and blend until it's a green paste, scraping down the sides halfway through.
Mix dressing through the noodles and stir everything together. Top with pumpkin seeds.

Plant-based: Use coconut yoghurt instead of Greek
Gluten free: Use 100% buckwheat noodles
