Green coconut smoothie

I enjoyed smoothies in both of my pregnancies - in my first trimester I found they helped me with morning sickness as I was craving cold/icey foods. Later in pregnancy they became a great way to “top up” my protein and micronutrient intake, when nutritional needs are highest. Smoothies are wonderful in the way that you can add all sorts of ingredients, making them extremely nutritious. This one is particularly rich in antioxidants, natural fats and fibre.

Ingredients

1/2 cup coconut milk (tinned is fine)

1/2 cup milk of choice

2 tbl Greek yoghurt

1 frozen banana

1/4 avocado

1 tablespoon hemp seeds

Handful baby spinach

1 tsp raw honey

1 tbl unflavoured protein powder/collagen (optional)

Ice

Method

Place all ingredients into a blender and blend until smooth. Add some water if it is too thick.
