Nutrient-dense Mash.

The often rejected potato is in fact a wonderful wholefood that can be enjoyed regularly during pregnancy (even those of you with gestational diabetes). Potatoes are high in the electrolyte potassium, and our electrolyte needs increase during pregnancy (due to our increased blood volume). The best way to eat potato is by pairing it with foods that are high in protein and fat, which is exactly what I have done in this recipe. This combination will lower the GI of the meal, prevent spikes in your blood sugar levels and provide sustained energy. It also includes the very important nutrient collagen (thanks to the bone broth) to help your stretching skin. And best of all it tastes delicious and goes down well if you are suffering from morning sickness.

Ingredients

3 medium sized potatoes (~500g), washed and cut into small cubes

1/2 cup chicken bone broth (or stock of choice)

1 tin cannelloni beans, rinsed and drained

1 tablespoon butter

Salt and pepper to taste

Method

Boil potatoes until soft, then drain. Set aside.

Rinse out the pot then add the bone broth, cannelloni beans and butter. Once boiling, add the potatoes back in to heat through then turn off the heat.

Mash to your desired consistency (or blend it) and season with salt and pepper.
