Tahini and Almond Bliss Balls.

Bliss balls are all the rage in recent years. I was a bit late to the party, however after realising how easy they are to make, how delicious and nutritious they are, I soon became a fan. They are now a staple in my house and we make many flavour combinations. They sit in the fridge just waiting to be nibbled at for a rushed breakfast, an afternoon snack, a lunch box goodie or an after dinner treat. I especially found them useful when I was pregnant because it was an immediate snack full of many nutrients - vitamins, fibre and protein. They keep you feeling satisfied and content until your next meal (and keep your bowels happy). They are quick to make and last in your fridge for a few weeks. My husband and toddler love them too, it's often a race to get the last one!

Ingredients

1 cup raw almonds

2 tablespoons tahini

10 medjool dates, pitted

1/2 cup desiccated coconut, plus extra for rolling

1/2 teaspoon cinnamon

Pinch sea salt

Method

Place almonds in a food processor and blend until it resembles fine bread crumbs. Add the tahini, dates, coconut, cinnamon and salt. Blend until it forms into a sticky dough. You may need to pause and scrap down the sides half way.

Roll into balls, then roll in extra coconut.

Keep in the fridge for a month, or in the freezer for 6 months.

 

Adjust it to you:

If you would like a chocolatey version, add 1.5 tablespoon cacao.
