Raspberry and coconut chia mousse

Did you know that combining yoghurt and chia seeds creates a mousse-like texture?! It's so much better than a regular chia pudding in my opinion. It’s more satisfying too, making it a great breakfast on the go or a snack. And it’s simple to meal prep and packed with fibre and antioxidants.

 Serves 4

Ingredients

1 cup milk

3/4 cup coconut milk/cream

1.5 cups raspberries (fresh or frozen)

1.5 cups Greek yoghurt

1-2 tablespoons maple syrup (depending on your sweet spot)

1 tsp vanilla extract

1/2 cup chia seeds

 

Method

Blend everything EXCEPT chia seeds in a blender until smooth.

Once smooth, add the chia seeds and blend on low for a few seconds (if your blender doesn’t have a low speed option, just mix the chia seeds in with a spoon.

Pour into glass jars and refrigerate for 4 hours or overnight.
