Sourdough crumpets

This is the perfect recipe to use up your sourdough starter discard! These sourdough crumpets are so yummy and easy to prepare, and a thousand times cheaper than store bought varieties. My whole family love them, I hope yours do too!

Makes ~8 crumpets

Ingredients

1/2 cup warm water

1/2 tsp honey

1 cup of sourdough starter discard*

1/2 cup flour (spelt, rye, plain)

1/4 tsp salt

1/2 tsp bicarb soda

1-2 tablespoons of olive oil or butter for cooking

Method

Add the warm water to a mixing bowl and stir in the honey until dissolved. Add all other ingredients (with the exception of the butter/oil) and combine well with a spoon.

Oil your egg rings using your hands. Heat butter/oil in a pan over low heat. Add your egg rings to the pan and spoon in roughly 3 tablespoons of batter to each ring. Cover the pan with a lid and cook for about 5 minutes or until the tops are full of small holes. Carefully flip the crumpets over (remove the rings), and cook for 1 minute on the other side.

Serve with your favourite toppings - we like chia jam and ricotta.
