Mumma lunch box - gestational diabetes
This mumma lunchbox focuses on carbohydrates that have a low glycemic index, mixed with foods high in natural fats, protein, fibre and acidic foods. This combination of nutrients prevents major highs or lows in blood sugar levels, which is preferential for anyone, but especially helpful for those managing gestational diabetes.
What’s in the box?
1/2 cup Greek yoghurt with raspberries and hemp seeds
1/2 apple, sliced (using this salted water trick)
1 tbl peanut butter
Tin of salmon (I use Good Fish)
1 cup non-starchy veggies (tomatoes, capsicum, cucumber)
1/2 avocado with pulse flakes and salt
1/3 cup chickpeas with olive oil and vinegar
1 tbl toasted seeds
What this provides you and your baby:
3.5 serves of veg (wow!)
2 serves calcium-rich foods
2.5 serves protein
1 serve fruit
2.5 serves of natural fats
Total carbohydrates = 32g
Total fibre = 14g
