Nori egg omelette
I have been making this omelette since the day I started writing my book and realised how important choline and iodine were for prenatal health. Eggs are one of the richest sources of choline, and seaweed is the richest source of iodine…put them together and you have yourself a delicious and nutritious combo. I personally think it tastes like Japanese Tamagoyaki (yum!). You can eat it on it's own as a snack, or have it for breakfast with some avocado and sauerkraut, or add it to any main meal when you need to boost up the protein (it's great in a sushi bowl, fried rice, on top of dahl, and so much more).
Ingredients
3 eggs
1 tsp sesame oil
Dash maple syrup (1/2 tsp)
Pinch of salt
1 sheet of nori
1/2 tbl extra virgin olive oil
Method
In a medium bowl, add the eggs, sesame oil, maple syrup and salt. Whisk together until well combined.
Heat a large fry pan over medium heat and add the olive oil. When hot, pour in the egg mixture and place the nori on top. Cook for 3 minutes (or until firm enough to flip) then flip and cook for another 1-2 minutes.
